Recipe: Pizza Puffs

I found this recipe on Pinterest. It’s super easy and kid friendly. My kids loved the finished product, especially dipping them in the pizza sauce.

3/4 cup flour (I used whole grain)

3/4 cup teaspoon baking powder

1 tablespoon Italian seasoning (I didn’t have any, used Nature’s Seasoning instead)

3/4 cup milk

1 egg

1 cup shredded mozzarella

1/4 cup grated parmesan

1 cup cubed pepperoni (I used turkey pepperoni to cut the fat)

1/2 cup store bought pizza sauce (for dipping)

Preheat oven to 375. Grease a muffin pan. In a large bowl, whisk together the flour, baking powder and seasoning. Mix in the milk and egg. Mix in the mozzarella, parmesan and pepperoni. Spoon the batter into the muffin tin and bake about 20 to 25 minutes. They will puff up and be golden brown. Once they’re cool, break them apart and dip in the pizza sauce.

Craft:  Handprint Owl

I found this on Pinterest too. I cut out the owl’s body and eyes from scrapbook paper I had laying around. E glued them on to the background page. OMG, toddlers love to glue. A little paint on her hands and voila! Wings! She gets a kick out of the handprint crafts, so even though it was simple, she had fun making it.

Outdoor Activity: Hiking at Kennesaw Mountain National Battlefield

Atlanta is full of Civil War history, and not too far from us is Kennesaw Mountain, the site of a major battle. The site has been turned into a park with hiking trails, bike trails, picnic areas and a history center. It’s beautiful this time of year with the leaves changing, and best of all, it’s free!

So that was our day!
